I would HIGHLY RECOMMEND going up to Menemsha to watch the sunset, if the weather permits. Give yourself enough time to get a steamed lobster & other seafood from Larsen's Fish Market (it's right at the beach and they cook everything to order), bring some beach towels, beach chairs, a bottle (or two of wine) and setup shop on the sand. The house has towels + chairs for your use!

Cool catamaran that offers Edgartown harbor sailing excursions.
ALSO, another option is Magic Carpet Sailboat Ride - We go every time we're on the island. The couple who run it are true sailors and it's so peaceful being out on the water.
